  • 2 chicken breasts, diced
  • 1/2 cup roasted peanuts
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 dried chili peppers (optional)
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 1 tbsp cornstarch
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • Green onions for garnish

Instructions

  1. In a bowl, mix soy sauce, hoisin sauce, rice vinegar, and cornstarch until smooth.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat. Add diced chicken and cook until browned on all sides; remove from pan.
  3. In the same pan, add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
  4. Add chopped bell peppers and optional chili peppers; stir-fry for about 2-3 minutes until slightly tender.
  5. Return the chicken to the pan and pour the sauce mixture over everything; stir well to coat.
  6. Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
  7. Stir in roasted peanuts just before serving and garnish with green onions.
