  • 4 garlic cloves, minced
  • Salt and pepper, to taste
  • 1 pint chopped tomatoes
  • 3 medium peaches, diced
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 lemon
  • Fresh basil leaves, sliced
  • 1 cup ricotta cheese
  • Balsamic glaze, for drizzling

Instructions

  1. Preheat oven to 375°F (190°C). Spread softened butter (or olive oil) on baguette slices and arrange on a baking sheet.
  2. In a small saucepan over medium heat, melt butter and sauté minced garlic until fragrant (about 3 minutes). Brush this mixture onto the baguette slices.
  3. Toast baguette slices in the oven for about 8-10 minutes until golden brown.
