  • Extra-virgin olive oil

  • 1½ cups room temperature water
  • 1 teaspoon active dry yeast
  • 3 cups bread or all-purpose flour (plus more for dusting)
  • ½ teaspoon dried oregano
  • 2 teaspoons finely chopped fresh rosemary (plus more for topping)

Instructions

  1. Preheat your oven to 400°F (204°C). Cut off the top third of the garlic head, drizzle with olive oil, sprinkle with salt and pepper, wrap tightly in foil, and roast for about 40 minutes until tender.
  2. In a mixing bowl, activate yeast by combining it with warm water for about 10 minutes until bubbly.
  3. In another bowl, whisk together flour, oregano, and salt. Combine activated yeast mixture with dry ingredients and add smashed roasted garlic and olive oil. Mix until just combined.
  4. Cover tightly with plastic wrap or a damp cloth and let rise at room temperature for 8 to 10 hours.
  5. Gently shape the dough on a floured surface, then place seam side up in a floured bowl. Cover and refrigerate overnight or up to 48 hours.
  6. Preheat your Dutch oven at 450°F (232°C). Carefully transfer the dough into it using parchment paper as handles. Bake covered for 30 minutes; remove the lid and bake for an additional 15 minutes or until golden brown.
