  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 can (15 oz) chickpeas (rinsed and lightly mashed)
  • 1 cup finely chopped bell pepper
  • 1/4 cup chopped green onions
  • 1 cup breadcrumbs (gluten-free if desired)
  • 1 large egg (or flax egg for vegan option)
  • 2 tablespoons soy sauce (or tamari/coconut aminos)
  • Spices: garlic powder, onion powder, ground cumin, smoked paprika
  • Olive oil for cooking

Instructions

  1. In a large mixing bowl, combine cooked quinoa, grated zucchini, grated carrot, mashed chickpeas, chopped bell pepper, green onions, breadcrumbs, egg (or flax egg), soy sauce, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  2. Form the mixture into patties about 3 inches wide.
  3. Heat olive oil in a non-stick skillet over medium heat. Cook patties for 4-5 minutes on each side until golden brown and crispy.
