  • 2 medium zucchinis, sliced
  • 1/4 cup hot honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a sheet pan with parchment paper or lightly grease it.
  3. In a large mixing bowl, whisk together hot honey, minced garlic, soy sauce, olive oil, salt, black pepper, and paprika until well combined.
  4. Place chicken thighs in the marinade and let them soak for at least 10 minutes (or up to an hour for deeper flavor).
  5. Slice the zucchinis into half-moons and arrange them on the prepared sheet pan.
  6. Drizzle remaining marinade over zucchinis and toss gently to coat.
  7. Arrange marinated chicken thighs skin-side up on the sheet pan among the zucchini.
