- 1 lb shrimp (peeled and deveined)
- 1 bunch asparagus (trimmed, cut into 1-inch pieces)
- 1 cup mushrooms (sliced)
- 2 garlic cloves (minced)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- Heat a skillet or wok over medium-high heat; add 1 tablespoon of olive oil.
- Add shrimp in a single layer; cook for about 2–3 minutes until they turn pink. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and toss in asparagus and mushrooms. Sauté for about 3–4 minutes until tender-crisp.
- Stir in minced garlic, salt, and pepper; cook for an additional minute until fragrant.
- Return shrimp to the skillet, add soy sauce and lemon juice; stir to combine everything well. Cook for another minute until heated through.
- Serve hot over rice or noodles.
