  • 1 lb shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed, cut into 1-inch pieces)
  • 1 cup mushrooms (sliced)
  • 2 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice

Instructions

  1. Heat a skillet or wok over medium-high heat; add 1 tablespoon of olive oil.
  2. Add shrimp in a single layer; cook for about 2–3 minutes until they turn pink. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil and toss in asparagus and mushrooms. Sauté for about 3–4 minutes until tender-crisp.
  4. Stir in minced garlic, salt, and pepper; cook for an additional minute until fragrant.
  5. Return shrimp to the skillet, add soy sauce and lemon juice; stir to combine everything well. Cook for another minute until heated through.
  6. Serve hot over rice or noodles.
