  • 3 boneless skinless chicken breasts (cut into cutlets)
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon garlic powder
  • 12 ounces cremini or button mushrooms (sliced)
  • 4 tablespoons unsalted butter (divided)
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 2 large shallots (thinly sliced)
  • ½ cup dry white grape juice
  • 1 ½ cups low sodium chicken broth
  • ½ cup heavy cream
  • 2 springs of fresh thyme
  • 1 teaspoon Dijon mustard
  • 2 teaspoons cornstarch (dissolved in water)

Instructions

  1. Pat chicken cutlets dry and season both sides with salt, pepper, and garlic powder. Dredge in flour, shaking off excess.
  2. Heat 2 tablespoons butter and olive oil in a large skillet over medium heat. Sear chicken cutlets for about 5 minutes per side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, melt remaining butter. Sauté sliced mushrooms for about 5 minutes until browned. Add shallots and cook for another 3 minutes; then stir in minced garlic for an additional minute.
  4. Deglaze the pan by pouring in grape juice and scraping up any browned bits. Add thyme, broth, Dijon mustard, and cream; bring to a boil for about 5 minutes to reduce slightly.
  5. Stir in dissolved cornstarch to thicken sauce; return chicken to the skillet and simmer gently for another 5 minutes until heated through.
