With sweet corn coated in a luscious creamy sauce enriched with lime, spices, and topped with crumbled cotija cheese, this dish is perfect as a side for grilled meats or enjoyed on its own.

  • 2 tablespoons unsalted butter
  • 4 cups frozen corn
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 cup cotija cheese (or feta)
  • 1/4 cup chopped cilantro or green onions

Instructions

  1. Heat a large skillet over medium-high heat and melt the unsalted butter. Add the frozen corn and sauté until heated through.
  2. In a mixing bowl, combine mayonnaise, sour cream, and lime juice. Mix until smooth.
  3. Pour the creamy mixture over the corn in the skillet and stir to combine.
  4. Sprinkle in cumin and chili powder; mix well. Cook for another 2-3 minutes until everything is heated through.
  5. Stir in half of the cotija cheese until melted; reserve some for garnish.
  6. Serve warm, topped with remaining cotija cheese and chopped cilantro or green onions.
