  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease either three mini loaf pans or one large loaf pan.
  2. In a medium mixing bowl, combine diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract until well blended.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually fold into the wet mixture until just combined—be careful not to overmix.
  4. Pour the batter evenly into the prepared pan(s).
  5. Bake for approximately 25-30 minutes for mini loaves or 50–55 minutes for a large loaf until golden brown and a toothpick comes out clean.
  6. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
