1 (14 ounce) bag Success® Whole Grain Brown Rice
2 tablespoons olive oil
3 medium chicken breasts (cut into chunks)
1 envelope (1.25 ounce) taco seasoning (divided)
½ green bell pepper (diced)
½ red bell pepper (diced)
½ yellow bell pepper (diced)
1 cup corn (fresh or frozen)
1 can (15 ounce) black beans (drained and rinsed)
1 can (10 ounce) Ro-tel diced tomatoes and green chilies
¼ cup fresh cilantro (chopped)
Instructions
Cook the Success® Whole Grain Brown Rice according to package directions; set aside.
Heat olive oil in a large skillet over medium heat, then add chicken chunks sprinkled with half the taco seasoning. Cook for about 3-4 minutes on each side until golden brown and cooked through.
Remove chicken from the skillet and add diced bell peppers. Sauté for about 4-5 minutes until tender.
Stir in corn, black beans, Ro-tel tomatoes, remaining taco seasoning, and chopped cilantro. Mix well.
Add the cooked rice to the skillet, folding everything together gently until heated through.
