  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 8 oz reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, brown sugar, canola oil, honey, and vanilla until smooth.
  3. Gently fold in the grated carrots, zucchini, and chopped walnuts.
  4. In another bowl, combine flour, baking powder, baking soda, and ground ginger. Gradually add this mixture to the wet ingredients until just combined.
  5. Pour the batter into the prepared pan and spread evenly. Bake for about 25 minutes or until golden brown and a toothpick inserted comes out clean.
  6. Allow to cool completely before frosting. To make the frosting, beat together cream cheese, icing sugar, and lemon zest until smooth. Spread over cooled bars.
