  • 4 salmon fillets (or 1 lb cubed salmon)
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 2 cloves minced garlic
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (green onions and cilantro) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet. Roast for 20–25 minutes until golden brown.
  2. In a bowl, whisk together sriracha, honey, soy sauce, minced garlic, lime juice, and sesame oil. Marinate salmon in half of this mixture for at least 15 minutes.
  3. Heat a non-stick skillet over medium-high heat. Sear the marinated salmon for about 4–5 minutes per side until caramelized and cooked through.
  4. Assemble bowls by placing jasmine rice at the base, topping it with roasted cauliflower and glazed salmon.
  5. Garnish with green onions, cilantro, and sesame seeds before serving.
