  • 1 cup raw cashews
  • 1/2 cup creamy cashew butter
  • 1/4 cup pure maple syrup
  • 1/4 cup Medjool dates, pitted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • Optional: white chocolate chips or dairy-free chocolate chips

Instructions

  1. In a food processor, blend rolled oats and raw cashews until fine.
  2. Add pitted Medjool dates and pulse until finely chopped.
  3. Mix in cashew butter, maple syrup, vanilla extract, and salt; blend until sticky dough forms.
  4. Fold in crushed freeze-dried strawberries until evenly incorporated.
  5. Roll the mixture into balls (about 2 tablespoons each) and place on a parchment-lined tray.
  6. Chill in the freezer for 20-30 minutes until firm.
  7. If desired, melt white chocolate chips with coconut oil and drizzle over chilled bites before garnishing with more strawberry pieces.
