  • 4 medium sweet potatoes, peeled and cubed
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil cubed sweet potatoes in a large pot until fork-tender (about 10 minutes). Drain and set aside.
  3. In a skillet over medium heat, sauté diced onion and bell pepper in olive oil until softened (about 5 minutes). Add minced garlic and sauté until fragrant (about 1 minute).
  4. In a mixing bowl, combine cooked sweet potatoes, black beans, corn, sautéed vegetables, spices, lime juice, salt, and pepper.
  5. Grease a baking dish and layer half of the mixture in it. Top with half of the cheese. Repeat with remaining mixture and cheese.
  6. Pour vegetable broth around the edges of the casserole.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is golden and bubbly.
  8. Allow to cool slightly before serving.
