  • 2 cooked & shredded chicken breasts
  • 2 zucchinis, sliced
  • 1 cup corn kernels
  • 1/2 cup black beans, rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat and sauté sliced zucchini for about 3–4 minutes until slightly softened.
  3. In a mixing bowl, combine shredded chicken, corn, black beans, salsa, chili powder, cumin, salt, and pepper. Mix well.
  4. In a baking dish (9×13 inches), layer half of the chicken mixture followed by half of the sautéed zucchini. Top with half of the shredded cheese.
  5. Repeat layers with remaining chicken mixture, zucchini, and finish with the remaining shredded cheese.
  6. Bake for 20 minutes or until bubbly and golden on top.
  7. Let rest for 5–10 minutes before serving.
