  • 1 tbsp peanut or coconut oil
  • 1 1/2 lb boneless, skinless chicken breast (cut into quarters)
  • 1 tsp salt
  • 1 onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp fresh ginger (minced)
  • 1 can California cling peach slices (398 ml)
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp rice vinegar
  • Juice of one lime
  • 1 tsp dried lemongrass
  • 1 tbsp cornstarch
  • 1 red bell pepper (thinly sliced)
  • 1/4 cup chopped peanuts
  • 2 tbsp fresh cilantro (chopped)

Instructions

  1. Heat oil in a large skillet over medium-high heat. Season chicken pieces with salt and sear until golden brown on each side, about three minutes per side. Remove and set aside.
  2. Lower heat to medium-low and add sliced onion; sauté until translucent (about three minutes). Add minced garlic and ginger, cooking for another two minutes until fragrant.
  3. Add drained peach slices along with their juice, honey, soy sauce, fish sauce, rice vinegar, lime juice, and cornstarch mixture. Whisk until combined.
  4. Return the chicken to the skillet along with sliced bell pepper; stir gently to coat everything in the sauce. Simmer for about five minutes until the chicken is cooked through.
  5. Serve hot over rice or noodles, garnished with chopped peanuts and cilantro.
