  • 8 oz fresh tomatoes, seeds removed and chopped
  • 8 oz baguette bread, cut into 1-inch slices
  • 4 oz fresh mozzarella cheese, thinly sliced
  • 2 oz onions, chopped (preferably sweet)
  • 4 tbsp extra virgin olive oil (divided)
  • 2 tbsp minced garlic
  • 4 tbsp balsamic vinegar
  • 2 tsp honey
  • 1/8 tsp salt
  • 0.5 oz fresh basil, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix 2 tablespoons of olive oil with minced garlic.
  3. Brush the garlic oil on both sides of the baguette slices and arrange them on a baking sheet.
  4. Toast in the oven for about 10 minutes until golden brown.
  5. In another bowl, combine tomatoes, onions, remaining olive oil, salt, and basil; mix well.
  6. In a small saucepan over medium-low heat, reduce balsamic vinegar until syrupy (about 8 minutes).
  7. Assemble bruschetta by layering mozzarella on toasted bread followed by the tomato mixture.
  8. Drizzle with balsamic glaze before serving.
