- 8 oz fresh tomatoes, seeds removed and chopped
- 8 oz baguette bread, cut into 1-inch slices
- 4 oz fresh mozzarella cheese, thinly sliced
- 2 oz onions, chopped (preferably sweet)
- 4 tbsp extra virgin olive oil (divided)
- 2 tbsp minced garlic
- 4 tbsp balsamic vinegar
- 2 tsp honey
- 1/8 tsp salt
- 0.5 oz fresh basil, chopped
- Preheat your oven to 350°F (175°C).
- In a bowl, mix 2 tablespoons of olive oil with minced garlic.
- Brush the garlic oil on both sides of the baguette slices and arrange them on a baking sheet.
- Toast in the oven for about 10 minutes until golden brown.
- In another bowl, combine tomatoes, onions, remaining olive oil, salt, and basil; mix well.
- In a small saucepan over medium-low heat, reduce balsamic vinegar until syrupy (about 8 minutes).
- Assemble bruschetta by layering mozzarella on toasted bread followed by the tomato mixture.
- Drizzle with balsamic glaze before serving.
