  • 3 cups cooked jasmine rice
  • 1/2 lb shrimp (peeled and deveined)
  • 1/2 Tbsp fresh minced cilantro
  • 8 oz can of pineapple chunks (drained)
  • 1 tbsp lime juice
  • 2 Tbsp pineapple juice
  • 3 Tbsp soy sauce
  • 2 Tbsp honey
  • 1/41/2 tsp chili powder (to taste)
  • Salt (to taste)

Instructions

  1. Rinse jasmine rice under cold water until clear; cook according to package instructions. Fluff with a fork and mix in minced cilantro.
  2. In a mixing bowl, combine shrimp with lime juice, chili powder, and salt. Marinate for at least 15 minutes.
  3. Heat oil in a non-stick skillet over medium heat; add marinated shrimp and sauté until golden brown.
  4. Remove shrimp and add drained pineapple chunks to the skillet; sear until caramelized (about 4-5 minutes).
  5. Mix reserved pineapple juice, soy sauce, honey, lime juice, chili powder, and minced cilantro in another bowl.
  6. Pour sauce over pineapples; let simmer for 2-3 minutes. Add shrimp back into the pan, tossing gently to coat.
  7. Serve over cilantro jasmine rice.
