2 cloves garlic, finely sliced
200g crumbly feta cheese
¼ cup + 2 tbsp full-fat cream cheese
3 tbsp extra virgin olive oil (plus additional for drizzling)
Fresh basil leaves
Honey (for drizzling)
Salt and pepper to taste
Instructions
Preheat your oven to 180°C (350°F). In a baking dish, combine cherry tomatoes and sliced garlic, drizzle with olive oil, season with salt and pepper.
Roast for about 30 minutes until blistered and fragrant.
In a food processor, blend the feta, cream cheese, lemon zest, and additional olive oil until smooth.
Spread the whipped feta on a serving plate and top with roasted tomatoes. Drizzle with honey and scatter fresh basil leaves on top.
