  • 250g mixed cherry tomatoes
  • 2 cloves garlic, finely sliced
  • 200g crumbly feta cheese
  • ¼ cup + 2 tbsp full-fat cream cheese
  • 3 tbsp extra virgin olive oil (plus additional for drizzling)
  • Fresh basil leaves
  • Honey (for drizzling)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F). In a baking dish, combine cherry tomatoes and sliced garlic, drizzle with olive oil, season with salt and pepper.
  2. Roast for about 30 minutes until blistered and fragrant.
  3. In a food processor, blend the feta, cream cheese, lemon zest, and additional olive oil until smooth.
  4. Spread the whipped feta on a serving plate and top with roasted tomatoes. Drizzle with honey and scatter fresh basil leaves on top.
  5. Serve with griddled ciabatta slices.
