  • 2 cups all-purpose flour
  • 1 1/2 tablespoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup cold butter, cubed
  • 1 cup whole milk
  • 1 egg
  • 1 1/2 cups shredded cheese (cheddar or mozzarella)
  • Optional: sliced scallions and garlic butter topping

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Shred the zucchini and let it drain in a colander for about 15 minutes to remove excess moisture.
  3. In a large mixing bowl, whisk together flour, baking powder, salt, black pepper, and garlic powder.
  4. Cut in cold butter until the mixture resembles coarse crumbs.
  5. In another bowl, whisk the egg and milk together; then add to the dry ingredients along with drained zucchini and shredded cheese. Mix until just combined.
