  • 15 oz boxed white cake mix
  • 1 cup boiling water
  • 3 oz box strawberry flavored Jell-o
  • 1/2 cup cold water
  • 8 oz tub non-dairy whipped topping
  • 8 oz package cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pound strawberries (sliced thin)
  • 1 to 2 cups blueberries

Instructions

  1. Preheat your oven as per the instructions on the boxed cake mix.
  2. In a large mixing bowl, combine the cake mix with boiling water and stir until smooth.
  3. Pour the batter into a greased 9×13-inch baking pan and bake according to package instructions until golden brown.
  4. After cooling for about 20 minutes, poke holes in the top of the cake using a fork.
  5. Dissolve strawberry Jell-o in boiling water, then add cold water; pour over the poked cake and refrigerate for at least three hours.
  6. In another bowl, beat together softened cream cheese, powdered sugar, non-dairy whipped topping, and vanilla until smooth.
  7. Spread the frosting over the chilled cake, then decorate with sliced strawberries for stripes and blueberries for stars.
  8. Chill again for at least one hour before serving.
