  • 3 medium Granny Smith apples, peeled and diced into 1-inch pieces
  • 1 Tablespoon lemon juice
  • 3/4 teaspoon cinnamon
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • 8 egg roll wrappers
  • Vegetable oil, for frying

Instructions

  1. In a medium saucepan over medium-high heat, combine diced apples, lemon juice, cinnamon, and sugar. Cook until bubbling.
  2. Mix cornstarch with water until smooth, then stir into the apple mixture until thickened. Remove from heat and let cool.
  3. Lay out egg roll wrappers and place about 1/4 cup of cooled apple filling on the lower third of each wrapper. Roll tightly and seal edges with water.
  4. Heat vegetable oil in a heavy-bottomed pot to 360°F (182°C). Fry the egg rolls in batches until golden brown (about 3-4 minutes).
  5. Transfer cooked egg rolls to a paper towel-lined baking sheet to drain excess oil before serving.
