  • 1 tablespoon pure maple syrup
  • 1 1/4 cups overly ripe mashed bananas (about 4 medium bananas)
  • Optional: chocolate chips, nut butter, chopped nuts, vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together almond flour, baking soda, sea salt, and cinnamon.
  3. In another bowl, mash the bananas until smooth. Add the maple syrup and egg (or flax egg) to the mashed bananas and mix well.
  4. Combine the wet ingredients with the dry mixture until fully incorporated.
  5. Scoop dough onto the prepared baking sheet and flatten slightly.
  6. Bake for 26-30 minutes until set but still soft in the middle.
  7. Allow cookies to cool on a wire rack for at least 10-15 minutes before enjoying.
