  • 1/4 cup canola oil
  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-by-5-inch loaf pan.
  2. In one bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
  3. In another bowl, mix eggs, melted butter, canola oil, brown sugar, and vanilla until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Stir in shredded zucchini and three-fourths of the chocolate chips.
  6. Pour batter into the prepared pan and sprinkle remaining chocolate chips on top.
  7. Bake for 50-60 minutes or until a toothpick comes out mostly clean.
  8. Allow to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
