  • 1 Tbsp dried culinary lavender
  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • 6 Tbsp cold unsalted butter, cubed
  • 1 cup cold buttermilk
  • Coarse sugar (optional, for topping)

Instructions

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. In a coffee grinder or food processor, blend the dried lavender with some granulated sugar until finely ground.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, and the lavender-sugar mixture.
  4. Cut in cold butter using a pastry blender or fork until pea-sized crumbs form.
  5. Stir in cold buttermilk until just combined; do not overmix.
  6. On a floured surface, gently pat the dough to about an inch thick and cut out biscuits using a fluted cutter.
  7. Place on the prepared baking sheet and freeze for 10 minutes.
