  • 4 ½ cups cooked jasmine rice (preferably day-old)
  • ½ lb skinless boneless chicken thighs
  • 1.5 cups frozen peas and carrots
  • 3 large eggs
  • 1 small shallot (or ¼ onion)
  • 3 garlic cloves
  • 4 teaspoons vegetable oil
  • 3 teaspoons regular soy sauce
  • 1 teaspoon Shaoxing Cooking apple vinegar (or alternatives)
  • 2 teaspoons sesame oil

Instructions

  1. In a medium bowl, marinate chicken thighs with soy sauce, vinegar, cornstarch, and a bit of oil for 5–10 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat. Cook marinated chicken until golden brown (about 5–7 minutes). Remove from pan.
  3. In the same skillet, sauté minced garlic and diced shallots until fragrant, then add frozen peas and carrots.
  4. Push veggies to the side and scramble beaten eggs in the pan.
  5. Add cooked chicken and day-old rice to the skillet; gently mix everything together.
  6. Pour the sauce around the edges of the pan and stir to combine until heated through.
  7. Finish with a drizzle of sesame oil before serving.
